GIRL POWER!!!

I’m missing my BFF’s so I thought I would plan a girls get together.Here is my list ladies…I am going to set my living room with soft throws and fluffy pillows…

Wine..A personal favorite is Fainting Goat from Franklin Hills Winery in Bangor,Pa. A delish black cherry wine..it’s addicting so pace yourself(comes from experience).

Guinness..tried and true,you can never go wrong with this.

Cheese..Cheddar is a great go to ,but I do like cream cheese flavored with smoked paprika and rolled in chopped pecans..any salted crackers will do..

Popcorn..microwave popcorn seasoned with sea salt and cracked black pepper

Fruit…raspberries,blueberries and sliced pears with a caramel dipping sauce(store made is quick and good)..

Flat bread Margarita pizza..so I buy Brooklyn Bred..yep that is how it is spelled..I brush a little olive oil on it and then add chopped plum tomatoes,fresh chopped basil,minced garlic with sea salt and pepper.Bake at 400 for about 15-20 minutes..

And now the most important part!!! DESSERT!!!!

Grab a boxed chocolate cake and replace the water with half sour cream and half coffee(make sure it’s cooled)..bake as suggested

Icing…Whipped cream..super easy ..start by chilling your bowl(metal works best)

1 and 1/2 cups heavy whipping cream

1 tablespoon of confectionery sugar

1 shot of Godiva chocolate liqueur

Put everything in the bowl and start out with your mixer on medium speed…then increase to high speed and whip until soft peaks form..be careful not to over beat..

Frost your cake!…I will make this my center piece on my coffee table..

So I can do the norm and watch Netflix…or I can do something fun and meaningful…

Give each lady paper and pen and ask them to make a Best Friends Bucket List..I think this a great way to learn more about each other and help each other achieve our bucket lists…One of mine is to rent a cabin in New England,do a whale watch, visit Salem and go out for an authentic New England seafood dinner with my besties..

We all have friends,but best friends are hard to come by and should be cherished..What better way to show them how much I love them, by feeding them and getting them tipsy!!!

Dinner…Again??

Do you ever find yourself thinking…what am I going to make for dinner tonight?Yes?.. We are members to Sams Club and I found an easy item to use…It is a combo of butternut squash,cranberries,red onions,maple syrup,black pepper,olive oil and sunflower oil with other spices.I use a pack of boneless/skinless chicken..or turkey to go with it.I cube the protein and season with salt and pepper and toss into a heated saute pan that has olive oil in it…about a tablespoon,and i cook until I get some golden brown on it.I use a thermometer and make sure the protein hits 165…then I add a bag(you get two bags and each bag is 20 oz.) of butternut squash mix.If your olive is almost gone add a little more( 1 tablespoon) cover with lid and cook for 7-8 minutes,take lid off and lower heat and cook 5 more minutes (it really depends on how tender you like your butternut). Let it rest for a few minutes and serve.This literally takes 15-20 minutes and it is delicious and quick. Sometimes I serve a side of roasted balsamic brussel sprouts .If you are really pressed for time a small already done rotisserie chicken will do the trick ,you can shredded it or chunk it and throw it in at the end.This serves 4 people in my house…with no leftovers. Enjoy!

My recipe for peach jalapeno salsa

  • 15 oz can of diced peaches in natural syrup(drain)
  • 2 jalapenos-seeded and diced
  • 1 red onion-chopped
  • 6 plum tomatoes-seeded and diced
  • 2 tablespoons of lemon juice
  • 1 tablespoon of fresh chopped cilantro
  • fresh ground black pepper
  • sea salt
  • Mix everything together and put into bowl with lid.Store in fridge overnight and use.I really like to let mine sit for 2 days as it increases the flavor.I use this salsa on pork dishes,grilled turkey sandwiches,rice and any chips..
  • If you like it really hot add extra jalapenos.You could also grill the jalapenos first for a smokey flavor.Enjoy!

Thyme for Thyme…

I love food..family..friends..booze..entertaining…holidays..

A group of friends take turns gathering at each others homes.It can get CRAZY! But…we all are close and enjoy all of our friendships..well they are all family to me but anyway I really like to entertain at our house.I set up my own bar and tweak it with the Holiday or celebration or the theme.I set a menu that will be easy and delicious, trying to hit on everyone’s likes.The last dinner party we had was awesome.Almost everyone had drinks(lots..no drinking and driving though!) and finger foods such as whiskey and black pepper pulled pork sliders with a peach jalapeno salsa,hot wing dip,spinach dip,cheeses,grapes and savory stuffed phyllo mini cups.

It was the first time making the hot wing dip and it was so freakin good, it was a hit..super easy.I wanted to add some lil fixins to my bar so I went to the dollar store and spent less than ten bucks on pretzel rods,chocolates and gummy bears.Guys when you are feeling good those fixins are a necessity.

We played one of those personal questions games that you need to ask questions to who you think will say yes to the question and try to get rid of your cards asap to win..Whoa! it was a blast…Learned some new info about all the group…lol..

Two weeks prior my Brother in law and I made our own apple pie infused moonshine..I will post this recipe as it tastes amazing.We had shots and laughed and ate .Great times with great people.
